I made this for dinner tonight. MMMMMMMM everyone loved it except for my daughter Megan, she is Zeke's mom.
1 TBS. vegetable oil
2 1/2 Cups small elbow macaroni
1/2 Cups shredded Muenster cheese
1/2 Cups shredded Gouda cheese
1 1/2 Cups medium cheddar cheese
1 1/4 Cups milk
1 Cup (8 0z.) Velveeta, cut into small cubes
1 Cup melted butter
2 large eggs, lightly beaten
1/4 teas. salt
1/8 teas. pepper
1 Large TBS. Alouette Garlic Herb spreadable cheese (optional)
Preheat the oven to 350 degrees. Lightly butter a deep 2 1/2 quart casserole.
Bring a large pot of salted water to a boil over high heat. Add the oil, then the elbow macaroni, and cook for about 8 minutes. Do not overcook. Drain well. Return it back to the pot.
Stir melted butter into macaroni.
In a large bowl, mix all the cheeses, add macaroni and butter mixture, add the milk then the cubed velveeta, and eggs. Season with the salt and pepper. Mix all together. Transfer to the buttered casserole. Sprinkle with 1 Cup shredded cheddar cheese.
Bake until bubbling around the edges, about 35 minutes.
This is delicious if you are not Megan.
