Oatmeal Raisin Cookies

This is my mother in law's recipe. I swear she has left something out of this recipe because mine are never as good as hers. She is sneaky!!
I also do not like raisins, but I like them in these cookies. Go figure.
1 Cup margarine ( she says she uses Albertson's brand )
1 Cup packed brown sugar
1/2 Cup sugar
2 eggs
1 teas. vanilla
Cream thse ingredients together.
Mix :
1 1/2 Cups flour
1 teas. salt
1 teas. soda
1 teas. cinnamon ( rounded teas. )
Nutmeg 1/2 to 1 teas.
Mix with the creamed mixture.
Add:
1 1/2 Cups raisins that have been soaked in boiling water and drained.
3 1/2 Cups instant oatmeal or 4 Cups depending on dough consistency.
1 Cup walnuts (optional)

Bake at 350 degrees 12 to 13 minutes Will seem under cooked. Let sit 5 minutes on the cookie sheet. Then transfer to a wire rack.

Never double the batch!!! I have been given strict orders. It doesn't turn out as well if you do.

Oh I'm so glad you cam by and joined in the fun at my cookie exchange! These look so good! I will have to remember that NO cookie recipe can turn out as well if you double it. That way either I can't eat as many, or I'll try two different kinds. ;-)

Have you seen the Everyone loves Raymond when his mom gives Deborah the wrong ingredients so she doesn't make it as well. Maybe that's the case!!! ;) I have the same problem with her rice crispies! There has to be something she does that she is not telling me!

Don't you know mom holds her nose right. Truly I think she sometimes cooks them even less than what she tells you. Plus I have found plumping the raisins twice helps.
