Since Papa was diagnosed with diabetes I have been trying to find healthier recipes for the both of us. This recipe is from Weight Watchers. I have tweaked it a little because well, I can't go cold turkey on everything that has fat or sugar in it. That's just me.
I mean I already gave up Pepsi!!!
Here we go:
2 TBLS. mayonnaise or low-fat mayo (if you want to ruin it)
8 slices multi grain bread (I used 4)
4 slices Swiss cheese or low-fat cheese (again if you want to ruin it)
1/2 small avocado, pitted, peeled and thinly sliced
2 carrots, shredded (I used one)
2 cups, alfalfa sprouts ( I used one cup, I was surprised Papa would even eat them.)
1 tomato, cut into 8 slices
1. Spread 1 1/2 teaspoons of the mayonnaise on each of the slices of bread, layer with Swiss cheese, avocado, carrots and alfalfa sprouts and 2 tomato slices.
2. Set a large nonstick skillet over medium heat. Lightly spray pan with nonstick spray, I also added a tiny bit of butter. (Really just a tiny bit)
Place sandwich in pan. Cook, turning once until the cheese is melted and the bread is toasted. Cut sandwich in half and serve at once.
This was delish, Papa even loved it!
