Cream Cheese Brownies

Tell me that doesn't look good. They are gone already. Mom's going to be mad.

I have no pictures yet because I am making these for the big game tomorrow. I have tried not to make these lately because I am trying to lose weight. ( by the way water aerobics got a little messy yesterday, I'll blog later, those old bags think they are going to squeeze me out....well they gotta another thing coming!! Oh I digress as usual.)

These brownies have kind of a heavy cake texture, with a cream cheese middle and Cream Cheese Chocolate Frosting. Oops!! I just slobbered on my shirt.

Anyway I have a sister in law, you know one of those natural beauties, plus she works out all the time and has lots of self control when it comes to food, yeah she makes me sick!!!! Well when she gets around these babies she loses all her self control. Hmmm Mmmm. She takes her clothes off and everything, runs around the house naked stuffing brownies down her throat. It's good she's in shape or it would be ugly.
Yep. Disclaimer, this is not my real sister in law. I have to say that or she will sue me. I think my sil's
butt looks better than that.

3 8 0z. Cream Cheese, softened
1/2 Cup sugar
2 eggs
1-2 TBS. Milk
1 Cup water
1 Cup Butter
5 heaping TBS. cocoa
2 squares of baking chocolate
4 eggs
2 Cups sugar
1/2 cup buttermilk
1 teas. baking soda
1 teas. vanilla
3 cups flour

Take 1 8 oz. cream cheese and 1/2 of another one of the cream cheeses and whip together with 1/2 cup sugar, the 2 eggs and milk until fluffy. Set aside.

In a sauce pan, heat water, butter cocoa and baking choc. until melted. Set aside and let cool a little. I actually usually do this part first so it can have some time to cool down.

In a large mixing bowl, beat eggs, add in 2 cups sugar, then buttermilk,vanilla, flour, and soda. Then mix in chocolate mixture.
Mix this together really well. I usually beat it with my mixer on high for 2 or 3 minutes.
Pour batter into a greased and floured cookie sheet. ( I just spray the cookie sheet w/ baking Pam or something like that.)

Take Cream Cheese mixture and pour over batter as evenly as possible. When finished pouring spread it out the rest of the way with a knife as best as you can.

Put it in a 350 degree oven ( pre- heated) for 30 minutes. Make sure it is fully baked by sticking a toothpick in the middle of brownie, if it comes out clean it is finished baking. If the middle seems jiggly or too soft let it bake a little longer.

Cool completely!!!!!!!!!!!!! Then frost.


If any of you have read any of my frosting recipes you know that they suck! They suck because I always wing the frosting.

This is pretty much what I do:

Take the rest of the softened Cream Cheese , or you can opt to just use 8 oz. of Cream Cheese.
1 Cup softened butter
6 heaping TBS. Cocoa
A 2 lb bag of powdered sugar
Some milk.

I mix the Cream Cheese and butter together until fluffy then add the cocoa, 1/2 the powdered sugar and a little milk then the rest of the powdered sugar. Yeah something like that. Add milk until you get the consistency you like, don't add too much milk at a time or you will have runny frosting and have to add more sugar, then cocoa, then milk, then sugar, it can turn into a vicious circle I tell ya. Just be patient.

This makes a ton of frosting. That's the way uh huh uh huh I like it uh huh uh huh! So does everybody else. I'll send you a picture of my sister in law!

This is a picture of the batter again. I thought it was the picture of the finished product. I don't dare try to delete it, because of my special computer abilities I would probably erase everthing. ( I have done that before.)

Me in the Morning

My brother stopped by this morning. He walked in looked at me and said "Holy Hannah, you have to put a picture of yourself on your blog! I mean really, people need to see what you look like in the morning!" I told him it would be too embarrasing. I don't want others to feel inferior or anything, but I got to thinking about it and decided he was right. I don't have the right to deny my beauty to all of you so here it is, I had him take my picture. Don't hate me because I'm beautiful. Yes, the dude down in the left corner is Papa slipping out of bed, somehow he got caught in the frame.

Bacon Chicken Bake

This was one yummy piece of chicken. Taylor made this meal for us the other night. My oh My that chicken was so moist and tender and tasty. You have to try this one!!
1/2 lb. bacon, finely dhopped and fried crisp. We used a lb. of bacon ( I mean who am I trying to kid? If there is a lb. we're gonna use it up.)
Taylor fried the bacon first, then Pete went at it with my super chopper. It worked out great that way.
1 cup seasoned bread crumbs
3 T. dried minced onion
6 skinless boneless chicken breasts
Ranch dressing
1 stick butter melted
Salt, pepper, and garlic to taste.
Preheat oven to 400 degrees. Mix bacon, breadcrumbs and dried onion in a large bowl. Season chicken breasts wigh salt, pepper and garlic, then brush with Ranch dressing. What I saw was more of a dip the breasts in a bowl of Ranch dressing and roll it around. There was no brush in sight. Coat liberally wih bread crumb mixture and place on a cookie sheet.

Drizzle with melted butter.

I don't know why I can't lose weight!
Anyway, back to the recipe. Bake for 30 minutes. Place under broiler for a few more minutes to get a nice golden brown crust. See above picture of crusted golden brown breasts. ( Yes chicken breasts we are not that kind of blog!)

Well kids, I have been given some pretty swell awards as of late. I thought I better get on the stick and reciprocate. Papa's mad because all he got from his award was a yellow sticky note stuck to his tush, but that's another story.
Ann from LIFE AT ANN'S PLACE is always the sweetest thing. She is becoming a good friend to me and I always appreciate everything she has to say. Ann recently gave me the two above awards. Two awards in one day!
I would like to pass these onto:

I hope you will all go and visit these special bloggers. They always know the right things to say and have great attitudes. I enjoy visiting with them every day. Well most every day. Migraine free days, but that's another story. I think I will start a support group on the subject.
I am excited because I get to go see a new specialist and maybe he can help me out. I have mentioned my dad and his neurological disease before and I promise one day I will explain it, well because it is genetic and rare I get to see some very prominent Dr.'s. YaY! (sarcasm) I hope the can figure me out, or knock me out, or do a head transplant. I am digressing as usual.

Yellowstone In Winter

Yellowstone is one of my favorite places in the world. I love the scenery, the smells, the animals. Last January Oby and Tara invited us to go up with them for a visit. We got to see it up close and personal in the dead of winter. Look how deep the snow is. That is not an optical illusion. It was almost to the roof tops.

These are pictures of the cabins where we were staying. Tara's brother and sister in law own the Hibernation Station in West Yellowstone. Well Tara's sister in law's dad owns it. They run the place and were kind enough to extend an invitation to stay for a few days.

The wildlife is spectacular there. We went again this past summer and didn't see near as many animals. These swan actually winter in Yellowstone because it's nice and balmy compared to where they come from further up north.

The Bison love the hot pools. They stay nice and toasty hanging around that hot water. Yes those lumpy things in the steam are Bison.

Here we are at Old Faithful. This is my mom and dad with Oby. Dad is in a wheelchair that is equipped with ski's on the front. Pretty nifty huh? I'm really glad we were able to take mom and dad with us. Dad doesn't do trips anymore. I'm thankful he got the opportunity to see the sights in the winter.

It was snowing really hard. Seeing Old faithful blow in a snow storm was really something. Unfortunately my camera didn't pick up the splendor of the event. The picture just looks like a white blur so I didn't bother posting it.

Here's Oby and Papa. We were freezing our butts off. Mom warmed up a few minutes later when she fell down in the parking lot of the Visitor Center and could not get up, she had worked up a good sweat rolling around in the ice before some man came along and hoisted her up. We had no idea, she said she was going to the restroom, that's all we knew. Mom took every opportunity she could to fall in the snow, she is such a show off. We should have strapped her to dads wheel chair.

This old guy, I think it's a guy. I didn't want to check! Anyway he was just trying to keep warm.

We wanted to have our picture taken with the Bison. This is as close as I wanted to get. Those things are mean. Well those are a few pictures of our trip. I was feeling a little nostalgic today so I thought I would share. I hope you like it. If you ever get the chance to go to Yellowstone in the winter, by all means go. We saw the sights, snowmobiled, with mom and dad hanging on for dear life I might add. We laid around and ate and laughed. We just had fun!!!!!

Pizza in a Pot , Crock Pot Pasta Sauce

This is my dad's favorite meal. It is also wonderful on a cold wintry day.

This was mom's plate. See the outline of where her spaghetti was. Well she took a huge plateful and said "I will only eat half of this and take the rest over to dad." Look what poor dad actually would have gotten. No wonder my dad is losing weight. No wonder my mom is gaining weight. It all makes sense now.
Luckily Papa took dad over his own plate.
1 lb. Italian sausage or hamburger ( I always double this recipe so I use 1lb. of sausage and 1 lb. of hamburger
1 28 oz. can crushed tomatoes
1 15 1/2 oz. can chili
1 15 1/2 oz. black beans, rinsed and drained
1 onion chopped
1 green pepper chopped
3 clove garlic, crushed
1 TBS. Italian seasoning
1/4 Cup sugar
1 teas. salt
Hot cooked pasta
Shredded Parmesan Cheese
In skillet fry meat until almost brown then add onion and continue cooking until meat is browned.
Put in Crock Pot
Add the rest of the ingredients. Mix well.
Cook for 2 - 6 hrs.
Makes 6 - 8 servings
Like I said I always doulble this recipe. It freezes real well if you want to do that too.
Oh I forgot:
Right before serving add the shredded cheese to the sauce.
Put over pasta and enjoy!!!!!!

What??? Sex Award????

Papa is a maniac. (A sex maniac)

I'm in here blogging, trying to catch up, when he notices I have been given some awards.
He asks what they are all about.
I say "Well when one blogger wants to give you a shout out or let you know they like you then they will give you an award of some sort. Then you reciprocate by doing the same for other bloggers."

Papa says nothing, he just disappears, comes back in the office and slabs this onto the computer.

He tells me "Now you have to reciprocate."

O.K. I guess I will take this little yellow sticky note and stick it to Papa. (That doesn't sound right. It sounds how Papa would like it to sound, I can tell you that for sure.)

Oh that Papa.
